Watermelon Fruit Cake

Impressive and showstopping, this watermelon cake is made entirely with fruit!

Ingredients

  • 2 watermelon (large and medium)
  • 250 grams green grapes
  • 6 large strawberries pointy
  • mint leaves fresh (to garnish)

Instructions

  • Top and tail the watermelon.
  • Lie the melon flat and trim away the rind to shape it into a cylinder.
  • Repeat with the other watermelon (ensuring one is a smaller cylinder shape than the other).
  • Insert three wooden skewers into the largest watermelon cylinder (you may need to shorten the skewers with scissors).
  • Arrange the smaller watermelon on top of the skewers.
  • Dry off the fruit with a paper towel.
  • Cut the grapes into clusters.
  • Attach the clusters with toothpicks starting from the bottom left (or right) to the opposite top corner.
  • Halve the strawberries, and secure these with toothpicks along the row of grapes.
  • Use fresh mint sprigs to fill in any gaps.
  • Serve.
