Ingredients

  • 5 grape tomatoes
  • 25 bocconcini
  • 1 carrot small
  • 20 fresh basil leaves
  • 1 teaspoon chia seeds
  • 100 grams arugula
  • 2 tablespoons balsamic glaze
  • 3 tablespoons olive oil
  • sea salt to taste
  • pepper to taste

Instructions

  • Cut the grape tomatoes in half and slice a bocconcini.
  • Place half a tomato onto a canapé stick and a bocconcini slice to make a hat.
  • Position one bocconcini onto the canape stick, then a rolled basil leaf (the scarf), and then another bocconcini.
  • Slice a carrot and cut a small triangle to make the nose.
  • Use chia seeds for the eyes and buttons.
  • Repeat to make the other snowmen.
  • Place the arugula on a platter.
  • Dress the salad with olive oil, balsamic glaze, sea salt, and pepper.
  • Arrange the snowmen sticks on the platter.
  • Top with sea salt and pepper again.
  • Serve.
