Snow Globe Burrata Platter

Festive burrata platter shaped into snow globes topped with fun bocconcini snowmen and cucumber Christmas trees.

Ingredients

  • 2 burrata cheese
  • 150 grams bocconcini mozzarella balls
  • 300 grams grape tomatoes halved
  • 1 small cucumber
  • 1 small carrot
  • 9 fresh basil leaves
  • 1 teaspoon chia seeds
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • sea salt to taste
  • pepper to taste

Instructions

  • Drain the burrata carefully on a piece of kitchen roll (paper towel).
  • Place the drained burrata in the middle of a platter (my platter was approximately 20cm/8 inches).
  • Cut a 3 cm (1 inch) piece of cucumber.
  • Peel and halve the cucumber lengthwise.
  • Halve one of the halves again and arrange the slices underneath the cheese to make the snow globe bases.
  • Cut a small square of cucumber to make a tree trunk and shape three triangles out of cucumber peel. Repeat for a second tree.
  • Place the tree details on top of a burrata to make the Christmas tree snow globe.
  • Halve two bocconcini and trim the back so they can lay flat. Repeat for the second snowman.
  • Place the bocconcini snowmen side by side on the second burrata.
  • Top with chia seeds for eyes, mouth, and buttons.
  • Use cucumber peel to make a scarf and trim a small triangle out of carrot for the nose.
  • Arrange the halved grape tomatoes cut side down on the platter.
  • Scatter with bocconcini to resemble snow.
  • Fill any gaps with fresh basil leaves.
  • When ready to serve, drizzle olive oil and balsamic glaze on the salad.
  • Season with sea salt and pepper.
