Mix all the ingredients in a large bowl (flour, yeast, salt, water, 50 ml olive oil, butter).
Knead by hand or use a stand mixer until the dough is smooth (takes about 5 minutes by hand).
Cover the bowl and let the dough rise for 1 hour.
Preheat the oven to 190℃ (374℉).
Line a baking sheet with parchment paper.
Divide the dough into 24 similarly sized pieces.
Roll each piece into a long log about 25-30 cm and 1 cm thick (12 inches by 0.4 inches).
Space them out so you have 12 on each baking sheet.
Brush with olive oil and sprinkle with sesame seeds.
Bake for 22-24 minutes until crisp and golden brown.
Allow to cool on a wire rack.
Repeat with the second round of breadsticks.
