Feta Watermelon Salad with Granola

Refreshing watermelon salad with feta, pomegranate arils, cucumber, and a crunchy caramelized pumpkin seed granola. Top everything off with a zesty honey vinaigrette.

Ingredients

Pumpkin seed granola

  • 1/3 cup water 80 ml
  • 1 tablespoon cane sugar
  • 1/2 cup pumpkin seeds 1 deciliter

Salad

  • 4 slices watermelon
  • 1/2 cucumber
  • 100 grams feta
  • 1/2 pomegranate seeds

Dressing

  • 8 tablespoons olive oil
  • 1/2 lemon juiced
  • 2 tablespoons honey
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • fresh basil or mint leaves

Instructions

  • To make the pumpkin seed granola, heat a small pan on medium-high.
  • Add the sugar, water, and seeds to the pan and mix with a wooden spoon.
  • After a few minutes, the water will boil and then evaporate.
  • Stir to caramelize the seeds.
  • Once the seeds are golden, pour them out onto parchment paper.
  • Use the wooden spoon to separate the seeds.
  • Sprinkle with sea salt and pepper.
  • Allow to cool.
  • Cube the watermelon.
  • Chop the cucumber.
  • Crumble the feta.
  • Start assembling the salad: Add watermelon cubes, cucumber, crumbled feta cheese, pomegranate seeds, and finally the pumpkin seed granola.
  • Mix together the dressing ingredients: olive oil, honey, finely chopped fresh basil (or mint) leaves, lemon juice, sea salt, and pepper.
  • Pour the dressing over the salad.
  • Serve.
