Custard

  • 30 grams cane sugar
  • 3 egg yolks pasteurized
  • 1 teaspoon vanilla paste
  • 250 ml whipping cream

Fruit salad

  • 1 mango peeled, diced
  • 1 pomegranate deseeded
  • 250 grams strawberries diced
  • 125 grams blueberries
  • 225 grams grapes green, quartered
  • 125 grams grapes red, quartered

Garnish

  • lemon balm leaves

Instructions

  • Whisk the egg yolks, vanilla, and sugar in a medium bowl with a hand mixer until light and creamy.
  • Whip the cream in a separate bowl until peaks form.
  • Fold the whipped cream into the egg mixture.
  • Dice the strawberries, mango, and grapes into similar-sized pieces.
  • Add all the fruit to a large bowl.
  • Fold in the fruit with the custard.
  • Transfer the fruit custard to a serving platter or bowl.
  • Serve.
