Custard
- 30 grams cane sugar
- 3 egg yolks pasteurized
- 1 teaspoon vanilla paste
- 250 ml whipping cream
Fruit salad
- 1 mango peeled, diced
- 1 pomegranate deseeded
- 250 grams strawberries diced
- 125 grams blueberries
- 225 grams grapes green, quartered
- 125 grams grapes red, quartered
Whisk the egg yolks, vanilla, and sugar in a medium bowl with a hand mixer until light and creamy.
Whip the cream in a separate bowl until peaks form.
Fold the whipped cream into the egg mixture.
Dice the strawberries, mango, and grapes into similar-sized pieces.
Add all the fruit to a large bowl.
Fold in the fruit with the custard.
Transfer the fruit custard to a serving platter or bowl.
Serve.
