Christmas Tree Sandwiches

Festive herby cream cheese and cucumber sandwiches arranged as a Christmas Tree.

Ingredients

  • 6 slices toast
  • 6 tablespoons garlic cream cheese
  • 3 cucumbers small
  • 200 grams smoked salmon
  • fresh dill
  • 1 yellow pepper

Instructions

  • Cut the crusts off the toast (you can use these to make croutons for soups, salads, etc).
  • Spread cream cheese on the toast.
  • Top half of the slices of toast with smoked salmon and fresh dill.
  • Use a vegetable grater or mandolin to slice the cucumber.
  • Place the cucumber in a row, overlapping each other.
  • Dry the cucumber with a paper towel.
  • Lay a piece of toast on top, cream cheese side up.
  • Trim the cucumber to fit the toast. Flip over using a spatula.
  • Place the cucumber toast on top of the smoked salmon halves. Repeat with the other toast halves.
  • Cut into triangles.
  • Arrange the triangles to look like a Christmas tree.
  • Cut out the yellow pepper star with the star cutter.
  • Top the tree with cucumber 'baubles', the yellow pepper star, and a cucumber trunk.
