Beef Bolognese

Slow cooked bolognese packed full of flavor. This is a great everyday meal!

Ingredients

  • 15 grams butter
  • 1 large red onion
  • 3 cloves garlic minced
  • 2 large carrots finely grated
  • 3 stalks celery finely chopped, leaves removed
  • 1 tablespoon dried oregano
  • 1200 grams minced beef 8-12%
  • 150 ml red wine
  • 390 grams chopped tomatoes
  • 680 grams Passata
  • sea salt to taste
  • pepper to taste
  • 1 tablespoon balsamic glaze

To serve

  • 500 grams spaghetti

Instructions

  • Add a knob of butter to a large pot set to medium heat.
  • Top with chopped onion and stir until translucent (about 2-3 minutes)
  • Add the finely chopped celery, carrots, and garlic. Cook until soft (about 7-10 minutes).
  • Turn up the heat to medium-high and add the beef.
  • Break up the beef and cook until browned.
  • Pour in the red wine and mix until reduced (about 2-3 minutes).
  • Now, add the passata, chopped tomatoes, and balsamic glaze.
  • Mix and bring to a simmer.
  • Then cover and reduce the heat to low for about 1.5 to 2.5 hours until thickened (stir occasionally).
  • Season the bolognese with sea salt and black pepper to taste.
  • Cook the spaghetti al dente according to the package instructions.
  • Mix the pasta with the meat sauce, top with Parmesan and fresh basil, and serve.
