I’ve been watching friends on social media make beautiful lattice pies for years. So I thought it would be fun to try and recreate that aesthetic with more everyday food.
Nothing is more every day than a sandwich, so that’s how the idea for these came about. They look wildly impressive but are easy to make. You can use any bread you prefer, sourdough, white, rye, pita, etc.
Ingredients
- 12 snack cucumber
- 3 tablespoons cream cheese
- 6 slices of rye bread
- large heart-shaped cookie cutters
- sprinkle of sea salt
- pinch of pepper
Instructions
Makes 6.
1. Peel the cucumbers so you are left with several equally long, equally wide pieces. You may need to trim them slightly.
2. Lay the peels vertically next to each other in a row. I had nine in total.
3. Now take a piece of cucumber peel, and weave it horizontally over and under the row.
4. Push the weaved piece to the top.
5. Repeat with a new piece, but go over where you went under previously, and under where you went over, etc. Push this to the top.
6. Continue this way until all the 6 intersecting pieces are in place.
7. Place the heart cutter on top of the weaved cucumber to press out the heart. Do the same with the bread.
8. Spread cream cheese on top of the rye bread hearts and sprinkle with sea salt and pepper.
9. Arrange the cucumber hearts on top of the cream cheese (I used a wide knife to lift it).
10. Serve.
